In these weekly Podcasts on Mondays, we will be discussing Quality, Health, Safety and Environmental training and concerns

In last week podcast we on the Quality side of the house we discussed HACCP (Hazard Analysis and Critical Control Point.), on the health side of the house we discussed occupational therapy or OT, and at the Safety Desk we hit on ladder safety, we finished up last weeks podcast with Environmental discussion on how to report spills and environmental violations.

This week on the quality side of the house  lets to talk about Critical Control Point (CCP)

CCP is the point where the failure of Standard Operation Procedure (SOP) could cause harm to customers and to the business, or even loss of the business itself. It is a point, step or procedure at which controls can be applied and a food safety hazard can be prevented, eliminated or reduced to acceptable levels. The most common CCP is cooking, where food safety managers designate critical limits. CCP identification is also an important step in risk and reliability analysis for water treatment processes.

 

Now let's move on to the health side of the house Food Born Illness

According to the CDC there are many different disease-causing germs that can contaminate food.  These most often effect Older Adults, Young children, Women who are Pregnant and people with immune system weakness.  

Some common foodborn germs are Norovirus, Salmonella, Listeria E.Coli and Vibrio just to name a few.

It is critical you know how to prevent these germs from entering your food products.

Florida only accepts online filing of Tier II reports and fee payment using E-Plan
